Grandma's Ginger Biscuits:
125 grams of butter
250 grams of sugar (1 cup)
2 eggs
1 tablespoon of golden syrup
Cream these all together. If you don't have an electric mixer, I've found that grating the butter makes it a lot easier!
Add:
250 grams of flour (2 cups)
3 level teaspoons of ginger
2 rounded teaspoons of mixed spice
1 rounded teaspoon of baking powder
1 level teaspoon of baking soda
Mix.
Roll into balls
DO NOT FLATTEN!!
Bake at 180 degrees celcius (350 Fahrenheit) for 15 minutes.
lol I just read you are supposed to grease the tray, but I usually just cover the tray with tin foil and thats fine! And they do spread out quite a lot so don't put the balls too close together!
